{"id":3352,"date":"2026-07-03T10:04:03","date_gmt":"2026-07-03T08:04:03","guid":{"rendered":"https:\/\/foodstory.es\/?p=3352"},"modified":"2026-07-03T10:04:33","modified_gmt":"2026-07-03T08:04:33","slug":"el-contract-catering-en-francia-ya-dispone-de-un-indicador-d-e-la-evolucion-de-los-precios","status":"publish","type":"post","link":"https:\/\/foodstory.es\/en\/el-contract-catering-en-francia-ya-dispone-de-un-indicador-d-e-la-evolucion-de-los-precios\/","title":{"rendered":"El contract catering en Francia ya dispone de un indicador de la evoluci\u00f3n de\u00a0 los precios"},"content":{"rendered":"<p class=\"wp-block-paragraph\"><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>\u00bfPor qu\u00e9 un \u00edndice de revisi\u00f3n de precios? &nbsp;&nbsp;&nbsp;<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">La pandemia, seguida de un periodo de inflaci\u00f3n muy alta, provoc\u00f3 una divergencia entre los \u00edndices INSEE utilizados para revalorar los precios de los servicios de restauraci\u00f3n colectiva y&nbsp;<strong>la evoluci\u00f3n real de los costes laborales y los precios de las materias primas.<\/strong>&nbsp;Los \u00edndices de precios al consumidor utilizados en las renegociaciones de contratos no reflejan con precisi\u00f3n los cambios reales en sus costes.<br>Tras m\u00e1s de un a\u00f1o y medio de trabajo,&nbsp;<strong>los dos \u00edndices est\u00e1n ahora a tu disposici\u00f3n, tanto para autogesti\u00f3n como concesi\u00f3n.<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>\u00bfPara qu\u00e9 se utilizan estos \u00edndices y c\u00f3mo los calcula el NTS cada mes?<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El objetivo principal de estos \u00edndices es permitir la revisi\u00f3n de las cl\u00e1usulas financieras de los contratos de restauraci\u00f3n colectiva, teniendo en cuenta la evoluci\u00f3n real de los costes para las empresas del sector. La publicaci\u00f3n de estos \u00edndices est\u00e1 sujeta a diferentes plazos, lo que influye directamente en la actualizaci\u00f3n del \u00edndice RC.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Entre los \u00edndices del INSEE, el ICHT es especialmente crucial. Su publicaci\u00f3n suele realizarse con un retraso de 3 a 6 meses. Como resultado, hay un retraso constante en la actualizaci\u00f3n del \u00edndice RC.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Por ejemplo, en octubre, los \u00edndices RC solo cubren datos hasta junio. Durante los meses de julio y agosto, tendremos que esperar a la publicaci\u00f3n de los \u00edndices a mediados de diciembre para actualizar la informaci\u00f3n.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Estatus provisional de los \u00edndices RC<\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El \u00edndice RC puede publicarse a veces con un estatus provisional. De hecho, muchos \u00edndices publicados por INSEE se publican inicialmente de forma provisional, antes de estabilizarse tras un ajuste.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Como regla general, la mayor\u00eda de los \u00edndices de INSEE mantienen este estatus provisional durante unos tres meses. Esto significa que durante este periodo, estos \u00edndices pueden sufrir revisiones, lo que tambi\u00e9n conduce a una posible evoluci\u00f3n de los \u00edndices RC tras su primera publicaci\u00f3n.
