Todo eso sigue siendo importante. <strong>Pero ya no basta.<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Un reciente documento impulsado por la organizaci\u00f3n brit\u00e1nica WRAP \u2014una de las entidades m\u00e1s activas en Europa en econom\u00eda circular y desperdicio alimentario\u2014 deja claro hacia d\u00f3nde se dirige la nueva agenda clim\u00e1tica del sector alimentario y del foodservice: el verdadero impacto ambiental ya no se mide solo en la cocina, sino en toda la cadena de suministro que hay detr\u00e1s del plato.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Y ah\u00ed aparece el concepto que empieza a dominar las conversaciones internacionales: el famoso \u201cScope 3\u201d.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Traducido al lenguaje hostelero, significa algo muy sencillo: las mayores emisiones de carbono de una cadena de restauraci\u00f3n no proceden del consumo el\u00e9ctrico del restaurante, sino de <strong>aquello que compra y sirve<\/strong>.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>La carne, los l\u00e1cteos, la agricultura intensiva, el transporte, el packaging, la refrigeraci\u00f3n, la log\u00edstica o el desperdicio alimentario representan hoy la mayor parte de la huella clim\u00e1tica del sector. En algunos casos, m\u00e1s del 90% de las emisiones totales se generan fuera del establecimiento.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>Es decir, el gran debate ya no ser\u00e1 \u00fanicamente cu\u00e1nto consume el local, sino qu\u00e9 compra, a qui\u00e9n compra y c\u00f3mo se produce aquello que vende.<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>El documento de WRAP intenta poner orden en un terreno que hasta ahora ha sido bastante ca\u00f3tico. Cada empresa calculaba las emisiones de forma distinta, utilizando metodolog\u00edas diferentes y datos poco comparables. El objetivo ahora es crear un lenguaje com\u00fan que permita medir de forma homog\u00e9nea las emisiones de toda la cadena alimentaria.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Pero el mensaje m\u00e1s interesante del informe no es t\u00e9cnico, sino estrat\u00e9gico.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>WRAP reconoce que nadie dispone todav\u00eda de datos perfectos y que el sector no puede quedarse paralizado esperando la precisi\u00f3n absoluta<strong>. La recomendaci\u00f3n es empezar cuanto antes, aunque sea con estimaciones iniciales, e ir mejorando progresivamente<\/strong>.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>En la pr\u00e1ctica, esto significa concentrarse primero en los grandes focos de impacto:<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><em>desperdicio alimentario,<\/em><\/li>\n\n\n\n<li><em>prote\u00ednas animales de alta huella,<\/em><\/li>\n\n\n\n<li><em>log\u00edstica,<\/em><\/li>\n\n\n\n<li><em>envases,<\/em><\/li>\n\n\n\n<li><em>origen de materias primas,<\/em><\/li>\n\n\n\n<li><em>eficiencia de la cadena de suministro.<\/em><\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Otro aspecto relevante es la creciente presi\u00f3n sobre los proveedores. El documento anticipa un escenario en el que <strong>fabricantes y distribuidores deber\u00e1n aportar informaci\u00f3n ambiental junto al producto, algo parecido a lo que ya ocurre con la trazabilidad o los al\u00e9rgenos.<\/strong><\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Para muchos operadores &nbsp;&nbsp;espa\u00f1oles de foodservice , todo esto puede sonar todav\u00eda lejano o excesivamente corporativo. Sin embargo, la tendencia parece irreversible. Grandes retailers europeos, grupos internacionales de restauraci\u00f3n y cadenas de foodservice ya est\u00e1n empezando a exigir datos de emisiones a sus proveedores.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Y tarde o temprano, esa presi\u00f3n acabar\u00e1 traslad\u00e1ndose al conjunto de la cadena.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>La cuesti\u00f3n de fondo es que la sostenibilidad deja de ser un asunto de comunicaci\u00f3n o reputaci\u00f3n para convertirse en un criterio operativo y de gesti\u00f3n.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>En los pr\u00f3ximos a\u00f1os, conceptos como:<\/em><\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><em>proximidad,<\/em><\/li>\n\n\n\n<li><em>estacionalidad,<\/em><\/li>\n\n\n\n<li><em>desperdicio,<\/em><\/li>\n\n\n\n<li><em>trazabilidad,<\/em><\/li>\n\n\n\n<li><em>composici\u00f3n del men\u00fa,<\/em><\/li>\n\n\n\n<li><em>optimizaci\u00f3n log\u00edstica,<\/em><\/li>\n\n\n\n<li><em>o huella de carbono de ingredientes<\/em><\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\"><em>pasar\u00e1n a formar parte del lenguaje cotidiano de compras y operaciones.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong><em>La descarbonizaci\u00f3n del foodservice no se resolver\u00e1 \u00fanicamente cambiando bombillas o instalando equipos m\u00e1s eficientes. El verdadero cambio afectar\u00e1 a toda la arquitectura de la cadena alimentaria.<\/em><\/strong><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>Y probablemente esa sea la gran transformaci\u00f3n silenciosa que ya est\u00e1 empezando en la hosteler\u00eda europea.<\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em> <\/em><\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><em>
