Y asi ha sido.<\/p>\n\n\n\n<p>En esa etapa de tiempo se ha regulado, desregulado y vuelto a regular sobre la cuadratura del c\u00edrculo, aqu\u00ed interpretado como el objetivo descarbonizaci\u00f3n. Nos han hablado de c\u00f3mo plantar \u00e1rboles en el Amazonas para mitigar eruptos y pedos de nuestra caba\u00f1a vacuna, impenitente contaminadora , mientras se le declaraba la guerra a los envases de uso \u00fanico y consagraba la prote\u00edna vegetal( la soja, siempre la soja) en aras de la c\u00e1rnica y se elevaba a los altares la gesti\u00f3n de residuos, food y non food, adem\u00e1s de recibir  nociones sobre econom\u00eda circular<\/p>\n\n\n\n<p>Algunos profesionales en el sector de la hosteler\u00eda creyeron en el Pacto Verde de los eur\u00f3cratas y aunque a sabiendas que los gobiernos de Espa\u00f1a no iban a ponerse delante del carro ,se pusieron a trabajar para ofrecer a los restaurantes gu\u00edas y hojas de ruta asequibles, yendo m\u00e1s all\u00e1 de  t\u00f3picos  como los de las etiquetas verdes, proximidad, el pl\u00e1stico o los plant based.<\/p>\n\n\n\n<p>Foodstory ha reunido en un pdf las conclusiones y res\u00famenes de las reuniones que, patrocinadas por el Ajuntament de Barcelona, realiz\u00f3 la Asociaci\u00f3n de Restaurantes Sostenibles que, al crearse en Madrid y Andaluc\u00eda sendas entidades similares ser\u00edan el germen de la creaci\u00f3n de la Fundaci\u00f3n de Restaurantes Sostenibles que dirige un infatigable Sergio Gil. Actividades que se publicaron  en la revista RESTAURACION NEWS , cuya jefa de redacci\u00f3n Anai Garc\u00eda dio toda clase de facilidades para divulgar la informaci\u00f3n.<\/p>\n\n\n\n<p>Estas reuniones sirvieron para concluir que ,el restaurante en una ciudad es un importante depredador del medio ambiente, m\u00e1s all\u00e1 de generar residuos o de comprar lejos. El regulador se ha limitado a traducir  legislaci\u00f3n de la UE o si era de un ente auton\u00f3mico a ,como suele ser habitual, causar m\u00e1s confusi\u00f3n que transparencia con sus publicaciones de normativa en los boletines oficiales,.<\/p>\n\n\n\n<p>Pese a ello, sectores como la restauraci\u00f3n colectiva, m\u00e1s solos que acompa\u00f1ados, han dado pasos de gigante  mientras la restauraci\u00f3n comercial practica m\u00e1s un wait and see, acomodada, ahora, al cambio de tuerca que en Bruselas y Estrasburgo ha dejado frenado el Pacto Verde en aras de prioridades que nada tienen que ver con la descarbonizaci\u00f3n y donde las siglas SBTi fueron como un calvario para las empresas que creyeron en la sostenibilidad con may\u00fascula.<\/p>\n\n\n\n<p>Los interesados en conocer como un grupo de restaurantes crey\u00f3 en el Pacto Verde y se puso las pilas, pueden ver sus actuaciones y resultados clicando en el link:<\/p>\n\n\n\n<p><a href=\"https:\/\/foodstory.es\/wp-content\/uploads\/2026\/03\/I.-SOSTENIBILIDAD-EN-RESTAURANTES-.pdf\">https:\/\/foodstory.es\/wp-content\/uploads\/2026\/03\/I.-SOSTENIBILIDAD-EN-RESTAURANTES-.pdf<\/a><\/p>\n\n\n\n<p><\/p>","protected":false},"excerpt":{"rendered":"<p>Hace una d\u00e9cada, funcionarios de la Uni\u00f3n Europea y tambi\u00e9n sus parlamentarios comunicaron a la sociedad del viejo continente que ,todo tenia que cambiar para que-siguiendo a Lampedusa-siguiera igual.
