En 2024, y por primera vez en mucho tiempo, experiment\u00f3 un ligero descenso, con un -0,7% de facturaci\u00f3n y un -0,3% de afluencia, seg\u00fan los \u00faltimos datos de Circana\/Gira Foodservice.<\/p>\n\n\n\n<p>Esto no impide, explica Nicolas Nouchi, fundador de la firma Strat\u00e9g&#8217;eat, que siga siendo una apuesta segura y un campo de oportunidades. Entre 2019 y 2023, el n\u00famero de establecimientos pas\u00f3 de 44.000 a 51.500 (+17%), y la facturaci\u00f3n aument\u00f3 un 19%, alcanzando los 23.400 millones de euros en 2023.<\/p>\n\n\n\n<p>\u00a0La concentraci\u00f3n de marcas se est\u00e1 acelerando, dice Nouchi , con un aumento del 30% en el n\u00famero de ellas y del 50% en unidades en los \u00faltimos \u00a0cinco a\u00f1os. Esta tendencia demuestra que las grandes cadenas dominan cada vez m\u00e1s el mercado, especialmente en el sector del bakery caf\u00e9  \u00a0que ha sabido diversificar y reforzar su oferta de snacks.<\/p>\n\n\n\n<p>&nbsp;El informe destaca tambi\u00e9n que se &nbsp;est\u00e1 asistiendo a un cambio en los patrones de consumo. Tras el reinado del \u00abtakeaway\u00bb, herencia del covid, el 73% de los consumidores prefiere ahora consumir in situ , frente al 50% de 2024. Por el contrario, las ventas de comida para llevar han bajado al 41% a principios de a\u00f1o y el delivery ha ca\u00eddo del 23% al 11%.<\/p>\n\n\n\n<p>El cliente de hoy quiere todo, desde velocidad, calidad, variedad y precios competitivos.
