{"id":1846,"date":"2024-10-26T14:21:20","date_gmt":"2024-10-26T12:21:20","guid":{"rendered":"https:\/\/foodstory.es\/?p=1846"},"modified":"2024-10-26T14:22:42","modified_gmt":"2024-10-26T12:22:42","slug":"la-efss-de-amsterdam-un-exito-de-publico-y-tematica","status":"publish","type":"post","link":"https:\/\/foodstory.es\/en\/la-efss-de-amsterdam-un-exito-de-publico-y-tematica\/","title":{"rendered":"La\u00a0\u00a0EFSS de Amsterdam, un \u00e9xito de p\u00fablico y tem\u00e1tica"},"content":{"rendered":"<p>A mediados de septiembre tuvo lugar en \u00c1msterdam, la edici\u00f3n n\u00famero 25 de la EFSS, European Food Service Summit que, hasta este a\u00f1o, se hab\u00eda celebrado en Zurich .<\/p>\n\n\n\n<p>La asistencia cualificada y una tem\u00e1tica tratada de indudable actualidad hizo que, la reuni\u00f3n, tuviera el m\u00e1s alto nivel que se pod\u00eda esperar.<\/p>\n\n\n\n<p>Como en cada edici\u00f3n de las 25, el profesor norteamericano Chris Muller, que se retiraba este a\u00f1o, coorganizador del evento y miembro del think tank del mismo, se encarg\u00f3 de resumir las principales conclusiones de las charlas individuales de los expertos invitados,\u00a0as\u00ed como de las mesas redondas y experiencias flash que se brindaron a los asistentes.\u00a0\u00a0<\/p>\n\n\n\n<p>De entre ellas destacamos las referidas a:<\/p>\n\n\n\n<p>Katrin Wissmann (Food Service Europe), sobre el concepto del bocadillo\u00a0\u00abstuffed bread \u00bb como un alimento universal que trasciende las barreras culturales. Se\u00f1al\u00f3 que, si bien en las diferentes culturas pueden tener diferentes nombres, como pita, tortilla o naan, el concepto fundamental sigue siendo el mismo. El\u00a0<em>choripan<\/em> ser\u00eda un ejemplo.<\/p>\n\n\n\n<p>Alan Honan que analiz\u00f3 la exitosa historia de crecimiento de Wingstop, destacando estrategias como la personalizaci\u00f3n pospuesta, la externalizaci\u00f3n de la producci\u00f3n no esencial y la optimizaci\u00f3n de la mano de obra.<\/p>\n\n\n\n<p>Philipp Laqu\u00e9 y Joaqu\u00edn Capel (Con Fuego) subrayaron el papel de los factores emocionales y de comportamiento en la fijaci\u00f3n de precios, destacando la importancia del storytelling para hacer que los clientes sientan que est\u00e1n ganando en lugar de perder.<\/p>\n\n\n\n<p>Edurne Uranga (Circana) destac\u00f3 con cifras la recuperaci\u00f3n del consumo OOH post-COVID, pero que exige una reinvenci\u00f3n de las experiencias gastron\u00f3micas tradicionales.<\/p>\n\n\n\n<p>Pere Taberner (Welbilt)\u00a0\u00a0resalt\u00f3 que con\u00a0una mayor digitalizaci\u00f3n en las operaciones de cocina mejoran\u00a0\u00a0la eficiencia y\u00a0\u00a0contribuyen a satisfacer la nueva\u00a0\u00a0demanda.<\/p>\n\n\n\n<p>Sven Oliver Neitzel se\u00f1al\u00f3 que los supermercados, conocidos por su oferta de productos frescos, pero tradicionalmente lentos en ofrecer comida preparada, ahora est\u00e1n aprovechando el potencial de este mercado para hacerlo.<\/p>\n\n\n\n<p>Despu\u00e9s de 25 a\u00f1os, las tareas y compromisos organizativos del Prof. Chris Muller pasan al profesor&nbsp;&nbsp;Dr. Torsten Olderog, que moderar\u00e1 el vento&nbsp;&nbsp;a partir de 2025.&nbsp;&nbsp;<\/p>","protected":false},"excerpt":{"rendered":"<p>A mediados de septiembre tuvo lugar en \u00c1msterdam, la edici\u00f3n n\u00famero 25 de la EFSS, European Food Service Summit que, hasta este a\u00f1o, se hab\u00eda celebrado en Zurich .
