Notable evoluci\u00f3n de la sostenibilidad en los restaurantes brit\u00e1nicos"},"content":{"rendered":"<p>La conocida revista que, hace muchos a\u00f1os, defiende los intereses de los consumidores en Gran Breta\u00f1a, se ocup\u00f3 el pasado a\u00f1o de realizar un estudio sobre el nivel de sostenibilidad que van adquiriendo las cadenas de restaurantes es su pa\u00eds. Para ello, pidi\u00f3 que una treintena de marcas de restauraci\u00f3n cumplimentaran un completo cuestionario sobre aspectos de sostenibilidad.<\/p>\n\n\n\n<p>El resultado se ha publicado hace pocas semanas y dado a Wahaca como ganador del sello Eco Provider, con el que Which\u00a0\u00a0ha reconocido a quien ha logrado la m\u00e1xima puntuaci\u00f3n, una vez valoradas las respuestas al cuestionario.<\/p>\n\n\n\n<p>Wahaca es la cadena de restaurantes tematizada en comida mexicana que dirige Thomasina Miers, ganadora de Masterchef en 2007 y que siempre ha apostado por la comida saludable y sostenible, siendo pionera en incorporar a los platos de la carta, su generaci\u00f3n de Co2, o contribuci\u00f3n a la huella de carbono.<\/p>\n\n\n\n<p>Otras marcas que fueron reconocidas como avanzadas en sostenibilidad fueron entre otras Frankie&amp;Bennys, Nando\u00b4s, Pr\u00eat a Manger, Wagamama y se reconoci\u00f3 la labor llevada a cabo por KFC y Gregg\u00b4s.<\/p>\n\n\n\n<p>Wich\u00b4s inform\u00f3 que no hab\u00eda obtenido respuesta de iconos de la restauraci\u00f3n de marca en Gran Breta\u00f1a tales como Subway, TGI Friday\u00b4s, Yo! Sushi o Five Guys.<\/p>\n\n\n\n<p>Un portavoz de Which\u00b4s,<strong>\u00a0<\/strong>coment\u00f3\u00a0que \u201c<em>Muchas personas quieren contribuir a prevenir el cambio clim\u00e1tico tomando decisiones m\u00e1s sostenibles y esperan que los restaurantes los apoyen siendo transparentes sobre sus emisiones y origen del suministro de\u00a0\u00a0\u00a0alimentos.\u201d<\/em> <\/p>\n\n\n\n<p>Continuando con:<\/p>\n\n\n\n<p>\u201c<em>Nuestra investigaci\u00f3n muestra que algunas cadenas de restaurantes est\u00e1n haciendo mucho m\u00e1s que otras, para reducir las emisiones de gases de efecto invernadero y el desperdicio de alimentos.\u00bb\u00a0<\/em><\/p>\n\n\n\n<p><em>\u201cAl visitar uno de los restaurantes reconocido por\u00a0\u00a0Which?\u00a0con Eco Provider, los comensales pueden estar seguros de que est\u00e1n en una cadena que tiene credenciales ecol\u00f3gicas muy valiosas\u201d.<\/em><\/p>\n\n\n\n<p>Los resultados del estudio no han ca\u00eddo bien en la organizaci\u00f3n\u00a0Zero Carbon Forum, que se ha lamentado de que el estudio de Which\u00b4s\u00a0no reconociera\u00a0\u00a0todos los esfuerzos que se est\u00e1n realizando en la industria de la restauraci\u00f3n para abordar los problemas de sostenibilidad.<\/p>\n\n\n\n<p>Un portavoz de ZCF\u00a0\u00a0ha se\u00f1alado que : <em>\u00abM\u00e1s de 60 empresas del sector,\u00a0operando en alrededor de\u00a0\u00a035.000 locales\u00a0y que representan\u00a0casi el 35% del sector, est\u00e1n trabajando en el seno de nuestra organizaci\u00f3n\u00a0\u00a0para reducir las emisiones con mayor velocidad y eficiencia de lo que podr\u00edan lograr individualmente, tanto para 2030 ( cero emisiones) como 2040 ( supply chain)<\/em> \u00ab. <\/p>\n\n\n\n<p>En la actualidad, en conjunto, est\u00e1\u00a0\u00a0eliminando m\u00e1s de medio mill\u00f3n de Tm\u00a0de CO2 al a\u00f1o, a trav\u00e9s de iniciativas energ\u00e9ticas.\u00a0\u00a0<\/p>\n\n\n\n<p><\/p>","protected":false},"excerpt":{"rendered":"<p>La conocida revista que, hace muchos a\u00f1os, defiende los intereses de los consumidores en Gran Breta\u00f1a, se ocup\u00f3 el pasado a\u00f1o de realizar un estudio sobre el nivel de sostenibilidad que van adquiriendo las cadenas de restaurantes es su pa\u00eds.
