Una decisi\u00f3n que afecta a millones de comidas al a\u00f1o y forma parte de un camino ya iniciado por 40 municipios finlandeses.<\/p>\n\n\n\n<p>La transici\u00f3n se producir\u00e1 de forma gradual, mediante platos h\u00edbridos en los que la prote\u00edna animal ser\u00e1 reemplazada progresivamente por prote\u00edna vegetal. Desde oto\u00f1o de 2029, la carne roja aparecer\u00e1 en el men\u00fa en las escuelas&nbsp;<strong>de Helsinki<\/strong>&nbsp;como mucho una o dos veces por semana.&nbsp;<strong>La Universidad Aalto<\/strong>&nbsp;ha calculado que reemplazar la mitad de sus compras de carne por prote\u00ednas de origen vegetal ahorrar\u00eda a la ciudad m\u00e1s de&nbsp;<strong>3 millones de euros al a\u00f1o<\/strong>. No es un sacrificio, por tanto: una inversi\u00f3n.<\/p>\n\n\n\n<p>Hay muchas razones para ello. A nivel medioambiental, la ganader\u00eda intensiva es responsable de aproximadamente el 14,5% de las emisiones de gases de efecto invernadero a nivel mundial, consumiendo enormes cantidades de agua y suelo. El informe&nbsp;<strong>Meat Atlas 2021<\/strong>&nbsp;documenta c\u00f3mo los cinco principales productores de alimentos animales o l\u00e1cteos emiten gases de efecto invernadero en una medida similar a la multinacional&nbsp;<strong>petrolera Exxon<\/strong>. A nivel \u00e9tico, la elecci\u00f3n forma parte de una trayectoria n\u00f3rdica que mira con valent\u00eda hacia el futuro de las pol\u00edticas alimentarias p\u00fablicas.<\/p>\n\n\n\n<p>La comparaci\u00f3n con otras ciudades es reveladora:&nbsp;<strong>\u00c1msterdam<\/strong>&nbsp;ha prohibido la publicidad de carne en espacios p\u00fablicos desde el 1 de mayo de 2026, actuando bajo demanda.&nbsp;<strong>Nueva York<\/strong>&nbsp;ha introducido un enfoque de \u00aborigen vegetal por defecto\u00bb en los hospitales p\u00fablicos, reduciendo las emisiones relacionadas con los alimentos en un 36%.
