A veces nace de una intuici\u00f3n, otras de una necesidad sentida. Pero no toda idea se convierte en legado. Para lograrlo, hace falta algo m\u00e1s que voluntad: hace falta visi\u00f3n, comunidad, perseverancia y generosidad.<\/p>\n\n\n\n<p>Durante 50 a\u00f1os en el sector alimentario, he tenido la oportunidad \u2014y la responsabilidad\u2014 de impulsar iniciativas que no buscaban protagonismo, sino prop\u00f3sito. Muchas de ellas se gestaron con la ayuda desinteresada de profesionales y expertos que comprendieron que el progreso no se construye en solitario y las he querido reunir, a modo de memoria profesional en una serie de e.books,<\/p>\n\n\n\n<p>Los distintos trabajos, no fueron escritos siguiendo la secuencia cronol\u00f3gica de los hechos, sino en sentido inverso. El recorrido parte del presente, cuando el ecosistema alimentario ya muestra su complejidad, sus contradicciones y la necesidad de repensarse, y avanza hacia atr\u00e1s buscando las capas que lo hicieron posible.<\/p>\n\n\n\n<p>Desde la reflexi\u00f3n reciente sobre sostenibilidad en la restauraci\u00f3n, el an\u00e1lisis retrocede hacia la consolidaci\u00f3n de la restauraci\u00f3n moderna y colectiva, su dimensi\u00f3n productiva y tecnol\u00f3gica, la aparici\u00f3n de nuevos formatos de consumo fuera del hogar y la observaci\u00f3n cr\u00edtica del desarrollo de las cadenas de restauraci\u00f3n espa\u00f1olas desde una mirada internacional. Cada etapa aporta contexto, pero ninguna se entiende de forma aislada.<\/p>\n\n\n\n<p>Ese camino inverso desemboca finalmente en el relato del nacimiento de la feria ALIMENTARIA , en el periodo comprendido entre 1975 y 1978. Con la distancia que da el tiempo, aquel momento puede interpretarse como un aut\u00e9ntico punto de ignici\u00f3n del ecosistema alimentario contempor\u00e1neo: una concentraci\u00f3n de iniciativas, decisiones, relaciones y oportunidades que dio lugar a una expansi\u00f3n prolongada, desigual y todav\u00eda visible. Un aut\u00e9ntico BIG BANG.<\/p>\n\n\n\n<p>Nada de lo que ocurri\u00f3 despu\u00e9s fue lineal ni completamente previsible. Hubo avances, fricciones, aciertos y renuncias. Y, sobre todo, hubo personas. Profesionales, empresas, instituciones y equipos que, con mayor o menor conciencia de ello, contribuyeron a que ese proceso tomara forma.<\/p>\n\n\n\n<p>Este acervo de experiencias no pretende &nbsp;tanto cerrar un ciclo, que tambi\u00e9n, o fijar conclusiones definitivas; algo imposible. Su funci\u00f3n es se\u00f1alar el origen y reconocer el recorrido. Compartir una experiencia que se construy\u00f3 colectivamente y que solo puede comprenderse mirando hacia atr\u00e1s, con alguna dosis de &nbsp;nostalgia, pero mucho m\u00e1s, con criterio profesional.<\/p>\n\n\n\n<p>Y es que, algunas ideas no prosperaron. Otras s\u00ed. Pero todas respondieron a una necesidad real. La mayor\u00eda se impulsaron desde asociaciones sin \u00e1nimo de lucro, porque el objetivo era que las cosas necesarias sucedieran, y que, al suceder, pudieran continuar sin depender de quien las inici\u00f3.<\/p>\n\n\n\n<p>Y eso es quiz\u00e1 lo m\u00e1s valioso: hoy, otros profesionales contin\u00faan lo que un d\u00eda empez\u00f3 como una chispa.
