Estrictamente regulado en t\u00e9rminos de composici\u00f3n de men\u00fas y responsabilidad ambiental (leyes Garot, AGEC y EGalim), la restauraci\u00f3n escolar &nbsp;tiene que enfrentarse a &nbsp;varios desaf\u00edos:&nbsp;catering sostenible,&nbsp;control de costos, o la innovaci\u00f3n&nbsp;para atraer a estudiantes de educaci\u00f3n secundaria y superior mediante formatos procedentes de la restauraci\u00f3n comercial.<\/p>\n\n\n\n<p><br>En cuanto a centros de salud, la&nbsp;restauraci\u00f3n en residencias para la tercera edad &nbsp; &nbsp;&nbsp;&nbsp;representa 1.300 millones de comidas servidas al a\u00f1o con &nbsp;una facturaci\u00f3n de 6.000 millones de euros (el 90% de los cuales se elaboran en establecimientos para personas mayores o discapacitadas). &nbsp;La restauraci\u00f3n &nbsp;hospitalaria &nbsp;registr\u00f3 casi 2.400 millones de euros de facturaci\u00f3n siendo hegem\u00f3nica la autogesti\u00f3n (74%)&nbsp;
