El 44% de los men\u00fas examinados registraron una mejora, gracias sobre todo a municipios como Trento, Udine, Frosinone, Rieti y Siracusa, que renovaron sus licitaciones. Pero eso no es suficiente. Demasiados ni\u00f1os siguen comiendo platos mon\u00f3tonos como la pasta blanca y el pan, rechazando la variedad propuesta como necesaria.<\/p>\n\n\n\n<p>El Informe, destaca c\u00f3mo la ley de los Criterios Ambientales M\u00ednimos (CAM) ha contribuido a que los men\u00fas sean m\u00e1s saludables y locales. La introducci\u00f3n de m\u00e1s legumbres, productos ecol\u00f3gicos y alimentos frescos de kil\u00f3metro cero ha mejorado sin duda la calidad, pero a\u00fan queda mucho camino por recorrer. Desafortunadamente, el aumento de los alimentos procesados sigue siendo un problema, y el porcentaje de comidas realmente consumidas parece estar disminuyendo inexorablemente.<\/p>\n\n\n\n<p>Los centros que invierten en educaci\u00f3n alimentaria y ofrecen una cocina &nbsp;&nbsp;calidad consiguen los mejores resultados. Un ambiente menos ruidoso, m\u00e1s tiempo para comer y atenci\u00f3n a la calidad de los productos marcan la diferencia. Pero, por el contrario, donde el comedor se ve solo como un servicio, el consumo de alimentos sigue siendo bajo y el fen\u00f3meno del desperdicio de alimentos ni siquiera se controla adecuadamente.<\/p>\n\n\n\n<p>El municipio toscano Sesto Forentino, se coron\u00f3 primero en el ranking &nbsp;, gracias a un men\u00fa que realza el territorio y respeta el medio ambiente. Con un 73% de alimentos procedentes de una cadena de suministro corta, incluyendo el aceite de oliva virgen extra y la pasta fresca de Mugello, Sesto Fiorentino demuestra que es posible combinar calidad gastron\u00f3mica, sostenibilidad y salud. Tambi\u00e9n encabezan el ranking Parma y Fano, que, junto con Cremona, siguen destacando por la calidad de sus men\u00fas.<\/p>\n\n\n\n<p><strong>&nbsp;<\/strong>Con m\u00e1s de 2 millones de comidas servidas cada d\u00eda, los comedores escolares son un recurso extraordinario para promover la agricultura local y estimular la econom\u00eda circular. Pero es necesario un compromiso constante y un cambio cultural que involucre a todos: desde las instituciones a las familias, pasando por las escuelas y los propios ni\u00f1os. Solo de esta manera ser\u00e1 posible reducir el desperdicio y aumentar la calidad de las comidas servidas.<\/p>\n\n\n\n<p>Si Italia realmente quiere centrarse en comedores escolares sostenibles, se\u00f1ala Ristorando, todav\u00eda queda un largo camino por recorrer.
